This weekend was another busy one. I worked 6 hours on Sat and 7 on Sunday. It always amazes me how much work I get done with no one else at work. I totally reorganized my office...and cleaned out some of the file drawers in the other two offices. Plus I worked on several spreadsheets...so a productive weekend.
Saturday we did stopped at our local micro-brew - Troegs - to try out their latest brews - did a little shopping and then headed out to dinner with our youngest son. Later in the evening our oldest son and DIL stopped in with their two dogs and we tried to sit outside around the firepit. I say tried because it had gotten very humid and the bugs were terrible. Within 30 minutes my ankles were so bitten up that I could barely move my left ankle. What can I say - mosquitoes love me. We were going to make s'mores - which our youngest did stay out to make - -but the rest of us moved back inside.
During our shopping trip my hubby bought me an early birthday present - a Kitchen Aid mixer. I have wanted one since my old stand mixer died several years ago and I have been trying to make do with a hand mixer. So today we decided to try out the mixer and my hubby's new cookbook on grilling pizzas. We whipped up a double batch of pizza dough and grilled the crusts and added toppings. Let's just say we will never be asked to be on the cooking channel! But we definitely had fun! Mine is still on the grill so we'll see how it turns out...ricotta, garlic, olive oil, sliced roma tomatoes and spinach. Our grill is not big enough to cook three pizzas...it was definitely a three ring circus.
ETA - my pizza was delicious. It will definitely be something we will have to experiment with - getting the crust to the right thickness and finding a better way to transfer the crust to the grill.
